Pantesca salad is a typical Sicilian dish that it is aten in summer. This colorful salad is traditionally prepared on the island of Pantelleria. The main ingredients are: boiled potatoes, tomatoes, red onion and olives. Also there are capers and it is flavored with basil and dried oregano. If you want, you can serve it with fish dishes, but I must say it could be a wonderful single dish as well! I have to make a recommendation: serve it cold so thaty all the ingredients are flavored well!
Serves: 4
- 700 grams potatoes
- 400 grams cherry tomato
- 120 grams red onion
- 40 grams black olives
- Desalted capers
- Extra virgin olive oil
- White wine vinegar
- Salt to taste
- Freshly ground white pepper to taste
- Dried oregano to taste
- Basil leaves
Method
Peel potatoes, wash and dice them. Cook in plenty of lightly salted water. In the meantime, peel the onion and cut it into cubes. Soak it in water and vinegar for about 25 minutes. Remove the core from the olives, after chop them. Wash tomatoes, remove seeds and cut them into very small cubes. When potatoes are cooked, drain and cool with cold water, in order to block cooking. Cool down to room temperature. Mix all the ingredients (including capers) in a bowl and season with plenty of oil. Flavor with basil and oregano. Salt and pepper. Put the salad in the fridge for at least an hour. Serve cold.
