Bavarois or Bavarian cream is a dessert made with crème Anglaise and whipped cream. Also it’s necessary to add to this preparation leaves gelatine and other ingredients you prefire such as chocolate or vanilla or fruit etc. .. It’s quite difficult to prepare since you need to make a perfect crème Anglaise as a base for dessert. You will need a kitchen thermometer that will allow you to understand when it’s the time to add some ingredients. So precision, technique and suitable tools are very important. However don’t be discouraged! the satisfaction of creating a perfect dessert like a professional patissier will make you overcome difficulties!
Ingredients for a 1l mold:
- 300 ml fresh cream
- 250 ml milk
- 80 grams sugar
- 80 grams yolk (about 4 yolks)
- 8 grams gelatine leaves
- 1 vanilla bean
For the strawberry fruit salad:
- 200 grams strawberries
- 3 tablespoons of granulated sugar
- 2 tablespoons of mandarin liqueur
Method
Mix yolks, sugar and the seeds of the vanilla with a whisk. Bring the milk to a boil and soak the gelatine in cold water. When the milk is hot, pour over yolks little by little. Stir continuously. Pour the mixture into the pot and bring to a temperature of 85° Celsius degrees. Remember to stir constantly to prevent the cream from sticking to the bottom of the pot. Remove from the heat and pour into a cold bowl (you should put it in the freezer for a few minutes before using). In this way the cream ends immediately cooking and its temperature begins to lower. When the cream has a temperature of 50-55° Celsius degrees, add the squeezed gelatine. Let it dissolve and let it cool the mixture. Semi-whip the cream. Add it when the crème Anglais has a temperature of 35° Celsius degrees. Mix with a whisk. Pour into a silicone mold and put in the freezer for at least 4 hours or a whole night.
Prepare the fruit salad before unmold the cake. Wash strawberries, remove the stalk and diced them. Place in a bowl and season with sugar and liqueur. Leave to marinate for a few minutes.
When the Bavarian is firmed, unmold and place it on a plate. Put in the refrigerator and serve when it has the right consistency to be cut. So it should be quite soft. Decorate with the fruit salad and serve.
