Everybody knows spinaches have many beneficial to health. Maybe some people may not like them, but I guarantee you that they are very good if prepared in the right way! I feel like a little granny is persuading you to eat this amazing vegetable… I wanted to intrigue you so I thought to propose you a fantastic dish that has as main ingredients spinaches. I’m talking about an Italian famous dish: risotto!! I want to convince especially the most reluctant to taste this delicate first course because not only spinaches but also many different ingredients contribute to making this simple dish tasty. Trust me: you will love it!
Serves:4
- 650 grams clean spinach
- 280 grams Carnaroli rice
- 1.5 l vegetable broth
- 35 grams Grana Padano aged 20 months grated
- 2 shallots
- 20 grams butter
- Freshly ground white pepper
- Salt
- Extra virgin olive oil
For the fondue with Gorgonzola:
- 120 ml fresh cream
- 40 gr sweet Gorgonzola
Method
Cook spinaches with a little oil and a little salt for a few minutes. Remove vegetables water and chop them with an immersion mixer. Set aside. Clean and chop shallots, let them brown and after add the rice. Toast and start pouring the hot vegetable stock little by little. Add salt. When there are 5 minutes left to cooking the rice,you can incorporate the spinach puree. Stir thoroughly and let cook. When the rice is coke remove from the heat, stir in the butter and grated Parmesan. Season with salt and pepper. While the rice rests for a couple of minutes, pour the fresh cream in a pot and add the dicedGorgonzola cheese, melt over medium heat and stir constantly with a whisk. Remove from the heat and keep warm.
Plating
Pour a few spoonfuls of risotto on a flat plate. Decorate with drops of fondue and some spinach leaves. Serve hot.
