The dark chocolate is the key ingredient of this recipe! It can flavor this dessert in an exceptional way and it blends perfectly with the brandy, the muscovado dark cane sugar and the khaki fruits. These ones are round, firm and fleshy, these fruits have a delicious sweet taste, but their taste is damped by a splash of lemon in the recipe . So it contrasts and gives freshness to the sugary flavor of these wonderful fruits. For this reason I’ve decided to serve the cake with a delicate fresh sauce. So? What are you waiting for? Serves: 6
- 250 grams of 50% dark chocolate
- 120 grams butter
- 100 grams muscovado cane sugar
- 50 grams all-purpose flour
- 4 eggs
- 20 ml brandy
- Icing sugar to taste
- Salt to taste.
For the khaki fruits sauce:
- 350 grams khaki fruits
- Lemon juice to taste
Method
Chop the chocolate coarsely and melt it in a bain-marie with the diced butter. Separate the yolks from the whites and place them in two different bowls. Beat the egg yolks with half sugar until you create a smooth mixture. After add a pinch of salt in the egg whites and start to whisk. Incorporate the cane sugar into small doses. At this point pour the chocolate and butter mixture into the bowl where the yolks are, mix, pour the sifted flour and finally pour the liqueur. The mixture should be very smooth and firm. Add the egg whites until stiff. Pour only 1/3 of the egg whites first, stirring with a whisk. After add the remaining egg whites, stirring gently with a spatula From the bottom to the top so you can’t disassemble the creme.Butter and flour the tin,so pour the mixture into the baking tin 25 cm in diameter. Cook in a preheated oven at 180° Celsius degrees for about 20-22 minutes. Turn off the oven and let the cake rest for 5 minutes. Then open the oven door and let the cake rest for another ten minutes.
While the cake is baking, you can prepare the sauce. Wash the khaki fruits and remove the stalk and the skin. Cut them into pieces and place the pulp in a glass, add some lemon juice and whisk. Then sift the pulp with a sieve.
Plating
Cut the cake into slices and sprinkle with icing sugar. Pous the khaki fruits sauce on the dishes and decorate with bitter cocoa , if you like. Put the slices on the sauce and serve.
