Today I didn’t really know what to cook, I had very few ingredients in the pantry and few ones in the fridge, but I wanted to eat a tasty pasta dish… Do you think about that ?! It was a nightmare! At the end I didn’t lose heart, so I sharpened my mind and I created a rich and appetizing first course! The only helpful ingredients to prepare this goodness are: pasta, potatoes, speck and vegetable broth. You can flavor the dish with herbs you prefer; I would still recommend thyme and sage that are perfect with potatoes!But you can also personalize the dish as you prefire, for example you can use the clams or sausage instead of the speck. Then enjoy your meal!!

Ingredients:
- 900 grams potatoes
- 350 grams “Occhi di lupo” pasta
- 2 shallots
- 150 grams speck
- 40 grams grated Grana Padano cheese
- vegetable broth
- extra virgin olive oil
- salt to taste
- ground white pepper to taste
- sage leaves
- thyme leaves
Method
Peel onions and shallots and cut the vegetables into cubes. In a saucepan, sauté the shallot with plenty of olive oil. Then add the potatoes, season with salt and pepper and add herbs. Cover with vegetable stock. Pour other broth from time to time during the cooking. Meanwhile dice the speck. When the potatoes are almost cooked, add the pasta, cover with other broth and continue to cook for five minutes. After this period, incorporate the speck. Surely you will need some other ladles of broth, then pour it as needed, as if you would to cook a good risotto. When the pasta is cooked and creamy, remove the pan from the heat and add the cheese. Stir and serve. Decorate with thyme leaves.
