Serves: 4
- 750 grams salmon
- Chopped garlic
- Grated lemon peel
- Himalayan pink salt to taste
- Freshly ground white pepper to taste
- Extra virgin olive oil
For the salad:
- Rocket leaves
- Radicchio leaves
For the salad dressing:
- Sesame oil
- Sesame seeds
- Muscovado sugar
- Rice vinegar
- Soy sauce
Method
Remove the skin and the salmon fishbones. Dice the fish and season with the ingredients listed. Stir. Form the salmon burger with a pastry ring and refrigerate for at least 30 minutes.In the meantime, clean the rocket and the radicchio and cut them finely.
Season the salad with a sauce prepared by mixing: sesame oil, sesame seeds, soy sauce, rice vinegar and sugar. Choose the doses of each ingredient according to your tastes.
Then cook the salmon burger in a preheated oven at 180 Celsius degrees for about 15 minutes.
Plating
Place the burger on a plate and add the fresh salad on top. Decorate the dish with the salad dressing.
