Marcel Proust wrote a novel called “In Search Of Lost Time”. In this famous work he wrote about madeleine that is a little and delicious cake. In this volume it’s clear how a small cake can awaken sensations and memories forgotten for a long time. Have you ever remember nice something while you were eating a delicacy? It happened to me. Maybe these little sweets will not help you to feel particular emotions, but try them and tell me if they don’t make you feel good!
Ingredients for 30 pieces:
- 230 grams pastry flour
- 150 grams granulated sugar
- 100 grams melted butter + the one to grease the pan
- 4 whole eggs
- Grated rind of a lemon
- Lemon juice
- 1 pinch of salt
- ½ sachet of baking powder (8 grams)
Method
Beat the eggs with the sugar and mix well. Add lemon juice and zest, stir and incorporate the sifted flour a little at a time. Sift and add the yeast. Stir and pour the melted butter. Mix the dough well until it’s smooth and then season with a little salt. Grease the baking pans and flour them lightly. Pour the mixture with two tablespoons and fill madaleine molds two-thirds full. Bake in preheated oven at 200° Celsius degrees for 12-13 minutes. Then take out the oven, let it cool and remove the cakes from the molds.
