My dear friends, here you are a delicious creamy dessert! It’s ideal to eat as snack or for breakfast. If you want, you can also offer it to your guests at the end of lunch, there is no better way to finish a good meal! The preparation is a bit long because you will also have to make cookies, but isn’t it satisfing preparing all dessert?! I assure you that your guests will congratulate you, but beware: don’t propose these greedy puddings to your friends on a diet!
Serves: 4
For the pudding:
- 500 ml milk
- 50 grams egg yolks
- 4 grams isinglass in sheets
- 60 grams of 50% dark chocolate
- 80 grams caster sugar
- 20 grams pastry flour
Soak the isinglass for 10 minutes. Bring the milk to the boil and in the meantime beat the egg yolks with the sugar. Add the sifted flour gradually. Then pour the hot milk over it and stir. Put the mixture back into the pot and when it has thickened, remove from the heat and add the softened gelatine and the chopped dark chocolate. Stir well until the chocolate has melted and pour into the appropriate glasses. Refrigerate for at least 3 hours.
For the whipped cream:
- 400 ml fresh cream
- 40 grams icing sugar
To decorate:
- Bitter cocoa powder to taste
Whip the cream and add the sugar gradually. Then pour it into the glasses with the congealed pudding. Cover the surface with some bitter cocoa.
For the cantucci:
- 250 grams pastry flour
- 160 grams caster sugar
- 100 grams unpeeled almonds
- 2 whole eggs + 1 egg yolk
- 10 grams honey
- 1 teaspoon ammonia for cakes
- 1 pinch of salt
- 1 vanilla bean
- Grated rind of a lemon
Toast the almonds in the oven at 200° Celsius degrees for two minutes. Remove from the oven and set aside. Beat the eggs with honey in a bowl. In another bowl mix all the remaining ingredients (except almonds). Then add the eggs to the dry ingredients and start kneading with your hands. After add the almonds and continue to knead. Let the dough rest at room temperature for 30 minutes. Form two long loaf, place them on a baking sheet lined with baking paper, brush them with the beaten yolk and bake at 180° Celsius degrees for 25 minutes. Remove from the oven, cut slices diagonally ( every slice must have about 1 cm thick), place them on the baking pan with the inside facing up. Cook for another 10 minutes at 150° Celsius degrees. Remove from the oven and let it cool.
