Who doesn’t like a nice portion of baked chicken? I doubt that any of you don’t love this kind of white meat. You can cook chicken as you want, the important thing is that it’s not too dry. I recommend you to try this exquisite breading flavored with aromatic herbs and spices. It is a recipe to be prepare with your family. Unlike the typical oven-baked chicken we have all tasted and it was prepared by the precious and expert hands of our grandmothers, this one that I suggest you has different consistences and contrasts. The crunchy note is given by the chicken skin and the pickled celery, while the creaminess is given by the mashed potatoes. Furthermore the golden and breaded meat completes this wonderful dish. I would have nothing more to add except that I suggest you have to try this dish immediately!
Serves: 4
For mashed potatoes:
- 360 grams yellow potatoes
- 1 knob of butter
- 40 grams grated Parmesan cheese
- Nutmeg
- Salt
- 80 ml milk
Method
Cook the whole potatoes, once tender, mash them and putt the purée in a bowl. Heat the milk and pour all the ingredients in a saucepan. Melt the butter and mix well. Remove from the heat. Set aside.
For pickled celery:
- Celery leaves and stalks
- 50 ml white wine
- 50 ml apple vinegar
- 50 ml water
- 50 grams granulated sugar
- Salt
Method
Put all the ingredients in a pot. Bring to a boil and cook for 2 minutes. Remove from heat and allow to cool. Then refrigerate until ready to use.
For the chicken breast:
- 460 grams whole chicken breast
- 1 egg
- 80 grams breadcrumbs
- 40 grams Parmigiano Reggiano
- Fresh ground white pepper
- Turmeric
- Dried oregano
- Some fresh chives
- Extra virgin olive oil
- Salt
Method
Beat the egg and prepare the breadcrumbs by adding all the ingredients in a dish except for the oil and the salt. Coat the chicken breast first in the egg and then in the mix of breadcrumbs. Place the meat in a pan lined with baking paper seasoned with olive oil and salt. Cook for 30-35 minutes in a preheated 200° Celsius degrees oven. Let the chicken rest for a few minutes before serving.
For the decoration:
- Chicken skin
- Celery leaves
- Salt
Method
Line the pan with parchment paper, place the chicken skin and put on another greased pan. Cook for 14-15 minutes at 175° Celsius degrees. In this way you will obtain a cooked and crunchy skin.
Plating
At the base of the dish pour a few tablespoons of mashed potatoes, put the chicken breast on top and decorate with pieces of pickled celery , celery leaves and chives.
