Summer is the fantastic season where you can finally go on vacation after a long period of work. In summer you can relax, perhaps by the sea. People, who don’t have the opportunity to stay near the sea, can relax at home with a good glass of ice cream or a nice portion of fresh fruit. Sometimes the suffocating heat makes the summer days a real torment. In my opinion, these two foods that I have just mentioned, are able to help us soothe our “pains”! I’ll tell you a secret: in summer I could go on eating only sorbets or ice cream and I doubt that any greedy person doesn’t think the same way. For this reason, I have prepared these little delicious glasses. The doses are a little bit approximate, but surely 12 people will be able to eat. If there will be some fruit salad glasses more, I don’t think that they will be wasted because this fruit salad with sorbet will cool and satisfy you very well.

Ingredients for 12 finger food
For the lime sorbet:
- 250 ml water
- 180 grams caster sugar
- 6 lime juice
- 1/2 lime peel
For the fruit salad:
- 1/2 pineapple
- 1 mango
- 1 coconut
- 12 cherries
- 2 lime juice
- 6 tablespoons ocaster sugar
- mint
The first thing you do is prepare the lime sorbet. So you have to pour the water in a pot, add the sugar and the lime zest. Then bring to a boil and wait for the sugar to melt. At this point you can turn off and let the syrup cool. When it is completely cold, pour the lime juice, strain through a sieve and place it in the freezer for about an hour. Turn on the ice cream machine and pour the mixture. Wait for the sorbet to form.
Meanwhile clean the fruit and cut into small pieces. Put the fruit cubes in a bowl, add the sugar and season with lime juice. Mix well and keep aside.
When the sorbet is ready, fill the glasses with your fruit salad and add a generous spoonful of sorbet. Decorate with mint leaves and serve immediately.
