In my town these beautiful sweets are prepared during the Carnival period. They are delicious balls of fried dough that are covered with honey or sugar. I would say that they are not really ideal if you are following a diet, if not they are fine for a delicious afternoon snack! Below there is the link of the audio recipe.
Audio recipe (Italian language)
Serves: 6
Ingredients
For the dough:
- 250 grams whole wheat flour
- warm water to taste
- 12grams brewer’s yeast
- a pinch of salt
- 1 teaspoon extravirgin olive oil
- 1 teaspoon honey
- sunflower oil (for frying)
To decorate:
- granulated sugar
- cinnamon
- honey
- colored sugar sprinkles
Method
To make the dough, pour the flour into a large bowl and make a well in the middle and sprinkle the edges with a pinch of salt. Melt the yeast in a little warm water and add it into the flour with oil and honey. Then start kneading, pouring, little by little, the warm water. It will be necessary to knead for about 10-15 minutes, that is until the dough will be smooth. Then let the dough rise in a warm and dry place for at least two hours. Then heat the oil to a temperature of 160 °. Form some little dough balls with two spoons, so put them in hot oil and fry for a few minutes or until the balls will be swollen and golden. It’s necessary to fry a little at a time because the oil temperature may lower. Drain on a on kitchen paper. When they are still hot, you will have to sprinkle them with a mix of granulated sugar and cinnamon or with honey and coloured sugar sprinkles.
