What about organizing an aperitif with your friends at home? Isn’t a great idea? Today I propose you some little and delicious starters. I’ve used a tomato mayonnaise To accompany these tasty meatballs that you can prepare a few hours before serving. These pleasant meatballs are eaten in one go! You can choose some cheeses you like best, for example I’ve chosen Parmigiano Reggiano and salted ricotta. However I suggest you not to put too cheese because you could cover the flavor of these exquisite seasonal vegetables!
Ingredients for the tomato mayonnaise:
- 150 grams datterino tomatoes
- 2 teaspoons of apple cider vinegar
- 60 ml sunflower oil
- Chilli powder to taste
- Salt to taste
Method
Wash and dip the cherry tomatoes in hot water. Remove the peel, cut them in half and remove seeds. Dice tomatoes and put in a big glass. Pour the vinegar, salt and sprinkle with chili pepper. Start blending with an immersion mixer. Simultaneously pour the oil little by little. Blend until the mayonnaise is ready. Place it in the fridge until it’s ready to serve.
Ingredients for 14 meatballs:
- 400 grams aubergines
- 80 grams stale crumb
- 1 egg
- 30 grams grated Parmigiano Reggiano
- 20 grams grated salted ricotta
- Salt to taste
- Freshly ground white pepper to taste
- 1 peeled garlic clove
- Basil leaves
- Bread crumbs
- Sunflower oil
Method
Wash aubergines, remove the stalk, cover them with tinfoil and cook in a preheated oven at 180° Celsius degrees for about 2 hours or until they are soft. In the meantime, soak the crumb until it’s soften and squeeze it. When aubergines are cooked, let them cool and remove the peel. Place the pulp in a bowl, mash it with a fork, add the soften crumb, the chopped basil leaves, the cheeses, a little breadcrumbs, the chopped garlic clove. after salt and pepper. Add the egg and mix well. Form small balls, pass them in breadcrumbs and fry in hot oil at a temperature of 170° Celsius degrees. Once golden, drain on paper towels and salt slightly.
Plating
Pour a spoonful of mayonnaise on single-portion plate. Place meatballs and decorate with basil leaves.
