Here you are a fantastic autumnal panna cotta! It’s rich, refined and also it has got surprising taste! The doses of the pomegranate syrup are plentiful, so you can use the advanced syrup to garnish some other desserts. Don’t worry: it’s so good that it won’t go to waste in any way! Also, you can use almonds instead of pistachios or you could use both dried fruits as well. I’ve choosen red grapes because its flavor fits perfectly with the remaining ingredients. Serves: 4
- 500 ml fresh cream
- 80 grams icing sugar
- 1 Bourbon vanilla pod
- 6 grams isinglass in sheets
Method:
Soak the gelatine sheets in cold water for about 10 minutes. Cut the vanilla pod lengthwise and remove the seeds with a knife. Pour the cream into a saucepan, add sugar and flavor with the vanilla seeds and pod. Heat the mixture well, turn off the heat and remove the vanilla pod. Drain the soft gelatine and squeeze it gently, then dip it in the hot cream. Stir until the gelatin has melted. Pour the cream into 4 metal molds. So put the panna cotta to set in the fridge for at least 6-7 hours. When it is firmed, first dip each mold in hot water for a few seconds, then unmold the panna cotta on the plate and decorate with pomegranate syrup, candied pistachios and red grapes berries.
For the pomegranate syrup:
- 300 ml pomegranate juice
- 250 grams caster sugar
Method:
Place the pomegranate fruit on the cutting board. Make a cut with the knife to remove the top cap and then do two vertical cuts to divide it into four pieces. Open and remove the grains from each piece. The juice can be prepared using a centrifuge or a juice extractor. Then pour the juice to a non-stick pot and add the sugar. Stir often and cook over medium heat. When it reaches a boil, cook about 10-15minutes . Remove from heat and let cool at room temperature.
For candied pistachios:
- 200 grams shelled pistachios
- 150 grams caster sugar
Method:
Place the sugar in a non-stick pan. Add pistachios and, if you want, a couple of tablespoons of water. Let it caramelize over high heat. The sugar will begin to melt,so you have to wait for it to caramelize. Each pistachio will be wrapped in sugar. After remove the pan from the heat and stir quickly. Let pistachios cool on a sheet of kitchen paper.
To decorate:
