During the Sunday morning the best thing you can do is to start the day calmly, awakening gently, sipping a hot coffee and above all have a hearty breakfast! The special Sundays must be spent with your family. During the week it isn’t possible to have breakfast with your loved ones. Sometimes it’s just impossible to have breakfast … So take advantage of this peaceful day to pamper all your family members. Prepare these delicious pancakes for them. They are soft, delicate, scented with vanilla and served with a tasty fruit sauce. They will make you regain strenght ! Enjoy them and tell me if I’m not right!
Ingredients for 4 pancakes:
- 20 ml whole milk
- 40 grams caster sugar
- 30 grams 00 flour
- 2 eggs
- a pinch of salt
- 1/2 vanilla bean seeds
- 1/2 teaspoon baking powder
- 1 knob of butter
For red fruits coulis:
- 250 grams red fruits (strawberries, blueberries and raspberries)
- 40 grams icing sugar
- 1/4 lemon juice
To decorate:
- a few cubes of butter
- icing sugar to taste
Method
Blend all the fruit and sift the mixture to remove seeds. Pour them into a non-stick pan, add the sugar and pour the lemon juice. Cook over low heat for about 5 minutes, stir frequently. Then remove from heat, pour into a bowl and let cool.
At this point prepare the pancakes. Separate the yolks from the whites into two different bowls. Mix the egg yolks with the milk, some sugar and vanilla seeds. Then add all the sifted flour and the baking powder. Stir. The cream should be smooth and without lumps. Start whipping the egg whites with a pinch of salt, you can use an electric whisk, then add the sugar (a little at a time) and continue whisking. Pour part of the egg whites into the cream of egg yolks and flour. Stir from bottom to top so as you won’t disassemble the mixture. Now place a non-stick pan on the heat and spread some butter. The flame must be low. Pour a generous dose of the mixture with a scoop for ice cream or a ladle. Cook the pancakes about 3-4 minutes per side. After turn over and cook for another 3-4 minutes.
Plating
Place the pancakes on a plate, sprinkle with icing sugar, add a cube of butter and pour a few spoonfuls of coulis.
