In the Sicilian hinterland there is a town whose colors of the sky and earth creates a unique landscape. This town is called Campobello di Licata. The almond trees have wonderful flowers that smell with their essence all the surrounding air. They are the creators of a fruit with excellent nutritional properties. We all know that it’s possible to use almonds in different ways and above all it’s possible to extract a wonderful white nectar. What am I talking about? I’m talking about almond milk! If you can to buy Sicilian and especially Agrigento’s almond, don’t hesitate to create this thirst-quenching, fresh and healthy drink!
Doses for 1 liter of milk:
- 300 grams almonds without shell
- 1 l water
- Caster sugar to taste
Method
Bring some water to the boil, remove from heat and dip the almonds with the skin. Let them soak for about 5 minutes. Drain and peel them. After chop coarsely, wrap them in a cotton gauze, make a knot and set aside. Heat 1 l of water, turn off and soak the almonds into the water. They must remain immersed for at least 4 hours. Then pour the almonds and half of the water in a blender. Whisk until a very thick cream is done. It will take a few seconds. Add the remaining water and blend again for a few seconds. Pour the mixture into a cotton cloth placed on a bowl, filter and then squeeze the mixture well. Your almond milk is ready! Remember: you can keep the milk in the fridge for three days.
