Yes, I know that you would want to stay on a beautiful Caribbean beach whose transparent waters would refresh you from the infernal heat of these days. But if you think about it well, in the Caribbean you could not taste a good homemade focaccia. So, if you don’t have the airline ticket and you want to enjoy the pleasures of life, you need three things: a great deal of patience, genuine ingredients and a cooling fan! You will suffer a bit for the oven heat, but your palate will thank you!
Ingredients for a rectangular baking pan (size 30 x 22 cm)
For the focaccia:
– 300 grams 260 W flour
– 200 grams re-milled durum wheat semolina
– 300 ml warm water
– 30 ml extra virgin olive oil
– 7 grams dry yeast
– 10 grams salt
– 2 teaspoons honey
– dried oregano
For the brine:
– 20 ml water at room temperature
– 20 ml extra virgin olive oil
– 5 grams salt
For the filling:
– 100 grams carpaccio
– lettuce leaves
For the tuna sauce:
– 2 whole hard-boiled eggs
– 100 grams tuna in oil
– 2 tablespoons of mayonnaise
– ground white pepper
– 1 anchovy fillet in oil
– some salt caper
– 1/2 lemon juice
Method
On a pastry board you have to knead the flour with water, baking powder and honey. When you get a smooth and homogeneous dough, add salt and oil. Knead again and cover with cling film and let it rest at room temperature for an hour.
Knead again with another bit of oil, form a ball, cover with cling film and let rise in the fridge for at 14 hours. Crush the dough with your hands and transfer it to a greased baking pan with oil. Turn and spread the dough. Prick the same with your fingers and brush the surface with the brine. Sprinkle with dried oregano. Bake at 230° Celsius degrees for about 20-23 minutes, then take out and serve.
For the tuna sauce: put all the ingredients in the blender and start to blend. The cream has to be smooth. Put aside.
Plating:
Cut focaccia into six pieces and divide it into two parts. Spread the sauce on both slices of focaccia. Stuff with slices of carpaccio and lettuce (washed, dried and cut into pieces) .
