The evenings with friends are beautiful because you can be in happy company chatting, watching a movie or a football match and above all eating. If you want to invite your best friends for dinner or lunch I suggest you something not too elaborate to offer: the bagels. Obviously they have to be stuffed very well, so I think they are the best choice. You can choose any type of filling, according to your tastes. The one that I propose you includes some good ingredients: rocket, Sicilian salad watermelon, smoked tuna and mayonnaise. Simple, tasty and easy to prepare. You will not take a lot of time for their creation, despite this there is some small passage to be respected, but don’t worry! Nothing so complicated! Have fun preparing them with your dear friends and above all … have fun eating them!
Serves: 8
For bagels:
- 500 grams bread flour
- 2 teaspoons salt
- 4 tablespoons sugar
- 25 grams fresh brewer’s yeast
- 400 ml warm water
For the filling:
- 270 grams smoked tuna
- 2 Sicilian salad melons
- Rocket to taste
For the mayonnaise:
- 2 very fresh egg yolks
- 3 teaspoons of apple vinegar
- Juice half a lemon
- Salt to taste
- 120 ml sunflower oil
Put in a bowl the yeast, a tablespoon of sugar, 50 grams of flour and 100 ml of water. Mix the ingredients well and let it rise for 20 minutes inside the oven, but with its light on. After this time, create a fountain with the remaining flour, put the first dough in the center and sprinkle with salt all around. Start mixing by adding a little water at a time. You will have to knead for 10 minutes. Let it rise again in the oven for another 60 minutes. Divide it now into 8 parts, then create smooth balls. Drill a hole in the center with a finger or the handle of a wooden spoon and let stand for another 15 minutes. Bring to the boil some water with the remaining sugar. Dip the bagels two at a time and cook for about 1 minute. In this way the sandwiches will swell slightly and create an “outer skin”. Drain and place on a dry cloth to drain excess water. Place each bagel on a baking tin cover with baking paper and sprinkle with poppy seeds and white sesame. Bake in preheated oven at 220 degrees for 25 minutes. Remove from the oven and let it cool.
Prepare the mayonnaise. Place the yolks in a bowl, pour a few drops of lemon and a teaspoon of vinegar. Start whipping them with a medium speed electric mixer. Add the oil in a thin stream whilst whisking continuously until thick and emulsified. After you have poured half the oil, add another teaspoon of vinegar and a little more lemon juice. Return to pour the oil and when it is all incorporated into the eggs, add salt and another teaspoon of vinegar. The dose of vinegar can vary according to your tastes. Refrigerate the mayonnaise until you are ready to use it.
Wash the rocket and the little salad melon. Dry and cut the latter into thin slices. Finally, stuff the bagels with slices Sicilian melon,smoked tuna, rocket and flavor with a little mayonnaise.
